Friday Random 10: Really old beer edition

Pax Arcana

Many San Francisco sourdough breads are made using a mother sponge of wet dough that is often more than a hundred years old. Seeking to do that one better, a scientist in California has begun producing beer, called Fossil Fuels, made from yeast strains recovered from a hunk of amber that dates back at least 25 million years:

William Brand, the Oakland Tribune beer critic, says the ancient yeast provides the wheat beer with a distinctively “clove-y” taste and a “weird spiciness at the finish.” (The Washington Post Style section’s summer beer critic pronounced it “smooth and spicy, excellent with chicken strips.”)

Of the science behind the suds, Cano says, “It’s just like the Rip Van Winkle effect. What they are doing, they are remaining dormant — the bacteria or the yeast and generally spores of some sort — and then when you take them out of the amber, they reawaken and continue to reproduce. So they are alive.”

Mmmmmmmmm, dinobeer.

Beer based on 25-million-year-old plants is exactly the sort of thing that will result in the transformation of booze-swillers into lizard men or dinosaurs and terrorizing the populace. It’s a SciFi Channel movie waiting to be realized. You have been warned.
